While discussing a little about his different grape varieties, Thierry Constantin wanted to highlight "Le Païen", because it is a white wine that lends itself well to any kind of culinary association. The winegrower, always in his search for the ideal harmony between find foodand great wines, wanted a vintage capable of expressing several facets of his personality. This grape variety was therefore the perfect choice.
With its aromas of exotic fruits and toasted rye bread, this racy and complex wine offers both the amateur and the experienced connoisseur of gastronomy a promise of a journey to the heart of the Valais, where it was made with passion. It can be enjoyed with white meat such as poultry, fish or even at the end of a meal with a cheese platter.
The vinification of this vintage is entirely done in barrels and not in stainless steel tanks as usual. It is then fermented for one year in this container before being racked and bottled without filtering. The marriage with the barrel gives all its flavors to the wine which will never cease to amaze the most curious who linger there. An experience rich in emotions guaranteed.
