Cantina della Murgia began its organic conversion in the early 1990s. Organic farming in this company goes beyond certification; it is a philosophy of life that becomes a production philosophy.
The adoption of 100% sustainable agronomic and oenological techniques involved lengthy studies and experiments, given that the estate has a large surface area and the vineyards are located in different areas, with different characteristics that affect the grapes and wines.
Aiming to stand out in a wine scene dedicated almost exclusively to red wine (primarily Primitivo) and still represent a territory with a vocation for winegrowing , Franco Ventricelli chooses two paths: the rediscovery of almost forgotten indigenous grape varieties and the elegant expression of each wine produced, whether white, bubbly, rosé or red.
The profound knowledge of its winegrowing heritage and its production capacity, both in terms of quality and quantity, while using only their own grapes, strictly harvested by hand, allows Colli della Murgia to market wines that are truly the best possible
To give a very practical example, some vineyards grow right between the stones. Murgia is of karstic origin, with very important outcrops of rock. In these soils the plant suffers greatly, producing very little but very concentrated fruit. These plots produce the rosé Sellaia, a wine with a very marked freshness and minerality. The grapes here never fully ripen, they remain crunchy and the Colli della Murgia team skilfully harvests them a little before they are fully ripe. The aromatic components of the grapes are therefore amplified and preserved as well as its acidity, which gives freshness and great drinkability to every sip.
Then there are some old Primitivo vineyards, about 600 metres above sea level, which produce little, but very well. Their grapes are left to overripen on the vine and are only used for Symbol, the king of Colli della Murgia wines. Thanks to the diurnal range, the ventilation and the mineral composition of the soil, this wine enjoys great freshness. The concentration of sugars makes it a powerful wine. It enchants with its complexity, structure and, at the same time, elegance. It is the result of experience, expertise and mastery in the management of the raw materials, since any human intervention in the cellar is always reduced to a minimum.
Producing organic wine with such a wide range of possibilities is fascinating. It is a daily challenge that implies courageous choices and above all great commitment.
