Peter Baur cultivates 7ha in the Zurich countryside. He himself processes 20% of the grapes into wine as a final product. Another source of income is the production of quality grapes, which is based on a good and close cooperation with renowned Zurich wineries. The Baur winery is a family-run business that aims to produce wines in harmony with nature. Over the years the Baur family has replaced all vines except for the Grand Cru location of the Pinot Noir to meet the demands of high quality and up to date production processes.
Peter Baur is convinced of the new grape varieties, the so-called PIWI’s (German abbreviation for “fungal resistant”), and currently uses them mainly to produce white and rosé wines. In addition, he is committed to a natural viticulture. In addition to conventional oak barrels, Peter Baur also matures wines in the newly acquired granite stone barrel. Baur wines are produced in integrated production (IP Suisse).
