The Appellation The Maury sec appellation is a young and small appellation which dates from 2011. The winemakers of the Maury cru, famous for its natural sweet wine, have chosen to magnify this fabulous terroir of schistous marl through a red wine full of promise. It is with the Domaine de la Tourèze, a very old sheepfold located on the heights of the cliffs of the Agly valley, that we propose this beautiful and elegant wine. Terroir Production area of the Maury dry appellation, in the communes of Maury, Tautavel, Saint Paul and Rasiguères. Made up of schistous marl from the secondary period (Aptian), the layered structure of this soil allows the roots to penetrate deeply to find the moisture necessary for their nourishment. The black colour of the shale allows it to absorb heat during the day and release it at night, allowing the grapes to reach full maturity. Grape varieties - Vinification Old vines selected for their low yield (25 hl/ha), harvested at full maturity. Manual harvesting. Selective sorting grain by grain. Long traditional maceration in concrete vats. Traditional maturation in concrete vats for 8 months before bottling. Tasting The colour is dark ruby. The tears are numerous, dense and regular. The nose is very complex: red fruits, blackcurrant, black cherry. In the mouth: the attack is ample, frank and expressive. The cherry is very present, overhanging flavours of undergrowth and torrefaction. The long finish ends with scents of garrigue, liquorice and cocoa. Wines with smooth tannins and elegant finesse.   • Syrah

    The term "serus" (Latin for “late”) gave this late ripening noble grape its name. Internationally it inspires with spicy notes of thyme and rosemary and hints of tobacco. Strong fruit notes of red and black currants and the ruby red colour make the Shiraz one of the most sought-after red wines. The high tannin content causes a rough leathery feeling on the tongue. These wines benefit from a long bottle ageing.
